WHere is an easy interpretation of a cocktail featured on our latest menu. It's a party-sized pre-mixed that is bursting with the tastes of the Christmas time, which makes it ideal for your celebration. Any leftover syrup for morning drinks, puddings, or for another batch of the drink.
Bikini Recipe
Serves 10 guests
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Place every items inside a pot, bring to a simmer, mixing until the sugar dissolves. Next, turn off the burner and let it to cool completely. Transfer into an sterilised bottle, cap it and store in the refrigerator, where it will keep for around four weeks.
For the Cocktail Base: Mix every liquid ingredients in a big jug, allow it to infuse for one hour, then strain best through cheesecloth, to ensure it's completely strained.
For serving: Measure 85ml from the cocktail base into your stirring glass containing ice, gently stirring carefully for about 60 seconds to cool it down. Pour to a cold coupe glass or equivalent, decorate with the cranberries and complete it using a brief mist of mandarin oil over the drink.
